The joke, explained
This could have been an email is a familiar complaint about meetings that mainly pass along information. The joke contrasts the time required to gather people with the simplicity of the message. It gives a very short review of a conversation that may have been unnecessarily long.
For the teammate who writes excellent meeting-decline notes.

Questions
What kind of meeting is getting reviewed here?
One where the main outcome was information that could have been written down. The line makes the mismatch between scheduling effort and useful discussion immediately recognizable.
Would a remote teammate understand the reference?
Someone who spends time in scheduled calls is likely to recognize it. The joke is about meeting habits and communication, so it travels beyond any specific role or workplace.
